Our philosophy. Inspiringly different.

Sustainability wasn’t born yesterday. At least not at the daberer. It started in 1978. Or maybe it already started almost 100 years ago with the spring. Our great-grandfathers were already thinking about how to stay healthy. And for over 4 decades we are concerned about the source of our food, as well as its production and processing methods. And there is even more to it in terms of nature, people and resources. Because tourism needs changemakers.

Our roots are deep. Represented by our traditional bird logo.

The spring. The origin.

It bubbles in the depths of the Gailtal Alps. Directly behind the building. Our spring. It characterises us and tells our story. In the beginning there was the spring. Then everything else came.  And it is still bubbling today. For over a century. It provides for us. Water self-sufficiency!

The story of the Daberer began almost 100 years ago. Thomas Daberer, the great-grandfather of Marianne and Christian, built the St. Daniel Spa in 1928, along with a guest house.

And this spa became an organic guest house. Already in 1978!

Inge and Willi Daberer, just married, shared the same vision. What would become of the great-grandfather’s spa. And this is how the organic guesthouse was born. With excellent organic cuisine, homemade bread and a passion for herbs and wholesome cuisine.

And it has become an insider tip among the health-conscious. This is how the guesthouse grew and became a well-known organic hotel. One of the first in Austria. The four children – Marianne, Christian, Fabiane and Clemens – grew up with the organic hotel.

Now the children are grown up. The two eldest siblings, Marianne and Christian, are continuing the daberer story. And they are doing it just as their parents did. Inspirational, courageous and contemporary. Simply typically daberer.

And the bird in the logo? It found us. It stands for taking your own path. From the great-grandparents with their spa to the organic guesthouse of Inge and Willi to the here and now. Innovative. With an open mind for the future. With the bird we want to refer to the landing spot - the nest. And to the lightness and nature.

It's a busy and fast time, and we really cherish this place in the here and now. We are who we are. We are genuine and authentic. And not just as a family. But also as a team. A perfect team, following the same tune. Where everyone can be themselves. Our hospitality comes from our heart. With appreciation and character. We are equals. A house filled with laughter. And plenty of favourite places. Grown. Not only the walls. Also in character.

The centrepiece of the organic philosophy. The cuisine.

What would we be without food? Means to live? Without any joy? And that's exactly why the cuisine is the quintessence. Since 1978. Until today. Quintessential is the use of the best ingredients. It is important where they come from and (and it is important) how they are produced. Fresh, colourful, seasonal and also a bit cheeky. And always delicious. And it is fun. Baking bread. Fermenting. Cooking. Products from here ... but sometimes also with a flavour or inspiration from somewhere else. Open and creative.
