First, there was the spring. Then, the daberer came. Food and drink are just as important to us today as it has always been. Perhaps passing this on from generation to generation is in our blood. The freshest water with the luxury of having our own spring. Plus our pure organic cuisine since 1978. What we do here is not just a fad. It’s part of us. Wholesome food and drink for everyone. Our life philosophy that we pass on from generation to generation.

We know where our products come from.

You're lucky if there are many organic food producers nearby. And that’s the case in Gailtal! And we are looking for even more. That is our absolutely most favourite type of food. No long transport journeys. Value added in the valley. With appreciation in our hearts. There are also amazing organic products all over Austria. And we also include the Alpine-Adriatic region, which is so close to us. As an organic hotel, it’s not only the “where from” that is important, but also the “how”. That makes sense.

Enjoyment has always been important to us. Everything started in 1978. Inge and Willi Daberer laid the foundation, and integrated organic cuisine. Not because it was fashionable. No. But because we believe in good, healthy food.

And our cuisine is still the same today. Bursting with flavour! With fresh ingredients. Colourful, varied and mindful. We cook with seasonal ingredients. We make a lot on our own. We ferment and preserve. Everything organic. A lot of slow food. With courage and a wink of the eye. Just not too conservative. This is what it looks like when our kitchen.team brings craftsmanship to the plate. Again and again, every single day!

Really good drinks to accompany the food. This is what drives our sommelier, Christian Daberer. He and his team are true experts! The wine list represents a journey through the Alpine-Adriatic region. Natural wines. Orange wines. Fantastic organic wine. Beer from the Loncium Brewery, just 5 km away. Plus an exciting selection of alcohol-free drinks and unfiltered juices from small, hand-picked producers. And not forgetting our homemade drinks. Keywords: oxymel, kombucha and kefir.

A real spring. Our own drinking water. Rich in minerals.

It is the source. It was already there before the daberer came. First, there were healing waters. Then came the spa. This then became the organic guesthouse. And now the spa has turned into the daberer. From the depths of the Gailtal Alps. Water from our own spring. Then and now! For the whole building. This healing treasure is all over.
