daberer.the organic hotel is run by siblings Marianne and Christian Daberer. Senior owners Inge and Will still lend a strong hand. Allow us to introduce ourselves.
After studying business and working as controller for a large concern, she has been with the hotel since 2006. She pulls the strings in the background, from administration and marketing to regional cooperations. She is a founding member of the Alps-Adriatic Slow Food Convivium and loves three men: her husband, Edelgreissler Herwig Ertl, and her sons Felix & Lorenz. She likes to travel, always returning with new ideas and inspirations. As a diversion and in order to free her mind, she does the lettering and artwork on the chalkboards in the hotel.
His apprenticeship as a chef and waiter at the hotel was followed by his journeyman years. He has been back at the hotel since 2003, and is today responsible for the restaurant and kitchen, whilst also taking care of all the employees. His passion is for wine – with a good nose for quality, he sets out in search of new, interesting vintners. Successfully so. As a hiking guide, during May and October he leads guests on hikes once a week to some of the most beautiful spots in Gailtal.
In the early days, this trained chef worked personally in the kitchen of the guesthouse, and was also involved as a wellness coach and masseuse. Today, she is dedicated to her favorite occupation, “being a grandma”, as she is to herbs. A few times she hosts a herb.workshop as well as other activities relating to herbs. She is the author of a herbal cookbook and, of course, the heart & soul of this hotel.
A passionate builder, he is constantly planning and sketching potential new projects. Which is why he is also responsible for all the engineering aspects of the house. As a counterbalance to this and in his role as a hiking guide, once a week during the green season he takes guests out on hikes through the wonderful mountain world in and around Dellach. And if he isn’t at the hotel, you will probably find him at the golf course.
